Gâteau aux pommes de Mamie du Tertre
A simple, yet delicious apple cake as prepared by my grandmother when I was a kid.
- I personally like to use Granny Smith apples for that recipe; they have a little acid taste that adds to the recipe, and you can usually find them in your local market or your garden starting in October. Back home, we used to make that cake with Reinettes, Gala, or even Pépins Sonnants (I’m not sure you can find that last variety outside of Brittany though.)
- This can work with pears as well! As long as your fruits are fresh, you’ll get a great cake.
- I like to add little chunks of cooking chocolate to that recipe. Feel free to skip that if you only want the original, or replace by chocolate chips. If you add a lot, I’d consider using no sugar in the mixture, and only sprinkle the cake with sugar a bit before to put it in the oven.
- I also add a bit of cinnamon, but that wasn’t in the original recipe. It’s just because I’ve been living in Hungary for so long. Here we add cinnamon to everything. ? Besides, not much can go wrong when mixing cinnamon and apples!
- Serve when still warm, ideally with some vanilla ice cream and whipped cream.
- In need of some comfort food? Forget the ice cream and the whipped cream. Make yourself some hot chocolate, and dip the apple cake in it. ✨
Ingredients
- 200 g flour.
- 150 g sugar.
- 2 eggs.
- 2 teaspoons of baking powder.
- 1 mug of milk (about 300 ml.)
- 3 tablespoons of oil (we used olive oil.)
- 2 tablespoons of rum.
- A pinch of vanilla powder.
- A pinch of cinnamon.
- A pinch of salt.
- 1 big apple or 3 small ones.
- Chocolate chips if you’d like.
Directions
- Pre-heat your oven at 200°C (400 °F)
- In a large bowl, mix the flour, the baking powder, the slat, and the vanilla powder.
- Add half of the sugar. Keep the rest aside for later.
- Add the eggs, one at a time.
- Add the rum and the oil.
- Add the milk.
- Once you’ve gone a nice and smooth mixture, keep it aside. Don’t worry if it’s still a bit grainy, it will all disappear when in the oven.
- Prepare your apples; peel and core them, and then cut them into big slices.
- Add them to the mix.
- Personal addition: add in chocolate chips.
- Butter your cake pan with salted butter. Don’t hesitate to be super generous there.
- Pour your mixture into the pan, spread it, and sprinkle the rest of your sugar on the top. It will make for a nice crust once the cake is ready.
- Bake the cake until lightly golden. That should be about 40 minutes. Take it out as soon as you can insert a knife in the centre of the cake and it comes out clean.
